I can't say I'm entirely certain that I have the best, most accurate answer for this, but I'm going to try to field it. JA or the photographers can feel free to correct me if I'm mistaken.
Since the rollover takes place where our photographers stand much of the time, it leaves relatively few places where one can stand safely and take pictures. The only real safe area is outside of the turn 1 & 2 vicinity...which essentially means that the pictures will be blocked by all of the tow vehicles and other track equipment.
If you look at Jim's pictures, for example, you'll see that the majority of them are taken from the "hill" up by turn 4. Not good perspective for rollover pictures.
